My Favorite Spaghetti Squash Recipe
Ingredients:
1 spaghetti squash
1 pound ground beef
2 cups broccoli
1/2 pound mozzarella cheese, shredded
1/2 cup La Favorita Pesto al Pomodoro or your favorite tomato pesto
Seasonings: salt, pepper, thyme, and sage
Prep Time 15 minutes
Cook Time 30-40 minutes
Total Time 1 hour
Difficulty Easy
Yield 2-4 servings
Directions:
1. Preheat oven to 400°F.
2. Cut the spaghetti squash in half horizontally and scoop out the innards.
3. Stab the outside shell of the squash all over with a fork. Coat the inside with olive oil and season with salt and pepper.
4. Face the squash inside down on a baking sheet and roast for 30-40 minutes (depending on the size).
5. While the squash roasts, cook the ground beef, seasoned with a bit of salt, pepper, thyme and sage.
6. When the ground beef is just done, add La Favorita Pesto al Pomodoro sauce — combine and set aside.
7. Cook the broccoli and set aside.
8. When the spaghetti squash is done, take it out and flip it over so the inside is facing up. Fill the cavity with ground beef and broccoli, deciding how much of each you want.
9. Cover the top with shredded cheese. Put the filled squash back in the over for 2 minutes on broil.
10. Take it out of the oven and let it cool for a few minutes before serving.
